Ingredients

  • 1 1/2 cups basmati rice, rinsed
  • 2 1/2 cups water
  • 1 tsp kosher salt, plus more to taste
  • 3 cups broccoli florets, bite-size
  • 2 cups hokkaido squash, 1/2-inch cubes
  • 2 cans tuna in spring water (about 5 oz each), drained
  • 3 packed cups baby spinach
  • 4 spring onions, thinly sliced
  • 1/4 cup tahini
  • 1 lime, zested and juiced
  • 2 tbsp water, to thin sauce
  • 2 tbsp fresh dill, chopped
  • 1/3 cup almonds, roughly chopped
  • 2 tbsp olive oil
  • Black pepper, to taste

Steps

  1. Cook the rice with water and 1 tsp salt according to package directions, then keep covered off heat.
  2. Steam the broccoli and squash in a covered pot with a splash of water until just tender, 6-8 minutes, then drain well.
  3. Whisk tahini, lime zest and juice, 2 tbsp water, a pinch of salt, and pepper until smooth and pourable.
  4. Warm olive oil in the pot, add drained tuna and a pinch of pepper, and heat just until warmed through, 1-2 minutes.
  5. Stir spinach into the hot rice to wilt, then divide rice among 4 bowls.
  6. Top with broccoli, squash, and tuna, then drizzle with tahini-lime sauce and finish with spring onion, dill, and almonds.
